Our sharpening process insures that you will receive the finest sharpest edge possible.
Each knife is inspected for initial condition and your sharpening request is reviewed. If we have any questions or concerns about the request, we contact you.
We use a combination of modern and traditional sharpening techniques, we create an edge that is razor sharp and long lasting.
Initial sharpening is done using a medium grit abrasive. The edge profile is adjusted to insure that it is uniform over the entire length of the knife.
Fine grit is used to smooth the profile and angle.
On some knives like non-serrated bread knives, the fine grit is the final step before washing, which leaves micro fine grooves on the edge which will aid “grabbing” crusty or tough skinned food.
Depending on the type of knife, a final polishing step is done. This is accomplished with fine, extra fine grit abrasive or leather strop.
The knife gets a final inspection and washing.
