There are basically 2 different style handles, the in-line and the off set handle. Knives with offset handles are sometimes referred to as “Deli knives”.

In-line handle

 

Off set handle

Only a few manufacturers make the off set handle.  Some chefs prefer this type of handle which prevents their knuckles from hitting the cutting surface.

The handles of kitchen knives can be made from a number of different materials, each of which has advantages and disadvantages


Wood

Wooden handles will provide a good grip and do not become very slippery when wet. They require more care as they must be treated with oil occasionally.


 Plastic

Plastic handles are easily cared for compared to wood. They are more sanitary as they do not absorb microorganisms as wood can.  They can become very slippery when wet.


 Composite

Composite handles are made by pressure treating wood with plastic like material. They do not absorb microorganisms and have the non slip grip of wood.


 Stainless Steel

Stainless steel handles are very strong. They can become slippery when wet. Some knife makers use indentations or ridges to create a non slip grip.
