Our sharpening process insures that you will receive the finest sharpest edge possible.

Each knife is inspected for initial condition and your sharpening request is reviewed. If we have any questions or concerns about the request, we contact you.  We will not proceed with sharpening any knife we have questions about until we hear back from you.

Using a combination of modern and traditional sharpening techniques, we create an edge that is razor sharp and long lasting.

The first thing we do is any bolster adjustments, tip repairs, or edge repair.  If the requested edge profile is different than what is currently on the knife, the new profile is also started.

Initial sharpening is done using a medium grit abrasive.  The edge profile is adjusted to insure that it is uniform over the entire length of the knife. The cut angle is put in place.

Fine grit is used to smooth the profile and angle.   On some knives like non-serrated bread knives, this is the final step before washing.  This leaves micro fine grooves on the edge which will aid “grabbing” crusty or tough skinned food.

Depending on the type of knife, a final polishing step is done.  This is accomplished with fine, extra fine grit abrasive or leather strop.  The knife gets a final inspection and washing. Wooden handles are treated.

The mail in kit you receive will contain an order form.  This form will allow you to request that the same type edge be kept, change the edge to our suggested one or have one of your own choosing.

A Sharpening Report is included with each order
